Business of the week: Nag’s Head Market stallholders making vegan kimchi lasagne go mainstream

In a weekly feature, we profile a fascinating company doing business here in Islington. This week, the Gazette was intrigued, to say the least, about a Nag’s Head Market stall selling vegan Korean/Italian fusion food. We visited Vegan Yes.

Vegan kimchi lasagne, anyone?

On paper, it looks like a baffling combination. Korean and Italian staples mixed together?

But for Vegan Yes, a Nag’s Head Market stall, that’s the whole point. It’s the brainchild of wife and husband Min Chung Jeoung and Mauro de Luca, who have fused passion for the cooking of their homelands with veganism.

They’ve been in Nag’s Head for 11 months, and the kimchi lasagne is the most popular dish. Other fusions include “toppi gnocci”, a combination of Korean rice sticks (toppoki) with Italian gnocci topped with tomato sauce.

Min told the Gazette: “As with most marriages, ideas, families and cuisines merge and meet at a happy point! I lived in Italy for 30 years where my love for Italian food blossomed and the idea for Vegan Yes was born.

“We chose Holloway due to its diverse mix of nationalities and cultures. The friendliness and openness of stallholders and customers is amazing.”
