Made in Islington: African cakes for Black History Month

Every week, we take to the streets to unearth something being manufactured right here in Islington. This week, we speak to cake baking business owner Cynthia Akinsanya, who has created a new range to celebrate Black History Month.
A baker in the Cally has created her own range of African-inspired cupcakes to mark Black History Month in October.
Cynthia Akinsanya, who runs her cake baking business, Delights by Cynthia, from her home in Cowdenbeath Path, has used African ingredients such as coconuts, citrus fruits, bananas and nuts.
And the cupcakes are decorated with edible beading and iconic African shapes and symbols.
She said: “I wanted to celebrate Black History Month in a sweet way, and everybody loves cupcakes!
“African arts, fashion and food is rising in rising in popularity and is on trend. We are putting our own stamp on food, fashion, music and the arts. It’s exciting to see.”
